For the Steak
  • 1 lb Steak Ribeye, NY Strip, Tenderloin, or Sirloin.
  • 1 tbsp Cajun Seasoning Opt for low sodium if desired.
  • 1 tbsp Avocado Oil Can use vegetable oil instead.
For the Garlic Butter and Sauce
  • 4 tbsp Butter Dairy-free spread can be used.
  • 4 cloves Garlic Fresh garlic recommended.
  • 1 cup Heavy Cream Coconut cream can be a non-dairy substitute.
  • 1 cup Parmesan Cheese Nutritional yeast can be used for vegan option.
  • 2 tbsp Fresh Parsley Can substitute with chives.
  • 2 tbsp Lemon Juice Lime juice can be used.
  • 1 tsp Red Pepper Flakes Adjust to taste.
  • 1 tsp Freshly Cracked Pepper To taste.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Scrub the russet potatoes under cold water, dry them thoroughly, and rub each with olive oil and sea salt. Bake on a pan for 50-60 minutes until fork-tender.
  2. Trim your choice of steak into 2-inch pieces and toss with avocado oil and Cajun seasoning. Heat a cast iron skillet and add the steak, cooking undisturbed for 2 minutes until a crust forms, then add garlic and butter, sautéing until fragrant.
  3. In the same skillet, add more butter and garlic to sauté for 1-2 minutes. Whisk in heavy cream, allow to simmer, and reduce for 3-5 minutes. Stir in red pepper flakes, grated parmesan, and season with salt and pepper.
  4. Once the potatoes are baked, cut a slit down the center, fluff the insides, fill with steak pieces, and top with creamy parmesan sauce. Garnish with fresh parsley before serving.

Notes
