For the Base
  • 1 cup Sauerkraut Store-bought or homemade
  • 2 tablespoons Canola Oil Substitute with vegetable or olive oil
  • 1 pound Polish Kielbasa Sausage Fully cooked for convenience
  • 1 medium Onion Or shallots/leeks
  • to taste teaspoon Salt
  • to taste teaspoon Freshly Ground Black Pepper
  • 1 teaspoon Caraway Seeds Or fennel seeds
  • 2 tablespoons Stone-Ground Mustard Dijon mustard as an alternative
  • 1 cup Chicken Stock or Beer Use broth for a non-alcoholic version
For the Casserole
  • 1 package Frozen Potato and Cheese Filled Pierogies No need to cook prior
  • 1 cup Grated White Cheddar Cheese Or Monterey Jack
  • 1 cup Grated Swiss Cheese Gruyère for richer flavor
  • 2 tablespoons Chopped Scallions For garnish

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Heat 2 tablespoons of canola oil in a large, oven-safe skillet over medium heat. Add sliced Polish kielbasa and cook for 3-5 minutes until golden brown. Remove and set aside.
  3. In the same skillet, add sliced onions, seasoning with salt and pepper. Sauté for 4-5 minutes until softened and caramelized.
  4. Stir in sauerkraut and caraway seeds, then pour in chicken stock or beer and add stone-ground mustard. Let it simmer for 2-3 minutes.
  5. Nestle the frozen pierogies into the mixture, returning the kielbasa to the skillet and mixing gently.
  6. Sprinkle grated white cheddar and Swiss cheese evenly over the top.
  7. Transfer to the preheated oven and bake for 10-12 minutes until cheese is bubbling and golden.
