Ingredients
  

  • 1 large cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup cream cheese softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled bacon cooked and cooled
  • 2 tablespoons fresh chives chopped
  • 1 tablespoon fresh lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1-2 jalapeños finely chopped (adjust based on heat preference)

Method
 

  1. In a large mixing bowl, combine the diced cucumber and halved cherry tomatoes.
  2. In a separate bowl, mix together the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped chives, lime juice, garlic powder, salt, and black pepper until well combined.
  3. Gently fold the cheese mixture into the cucumber and tomato mixture until everything is evenly coated.
  4. Add the finely chopped jalapeños and mix gently to incorporate.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve chilled and enjoy!
