  • 8 slices Challah Bread 1-2 days old recommended
  • 1 cup Almond Milk or any milk of your choice
  • 4 large Eggs
  • 2 tablespoons Fresh Parsley chopped, or chives
  • 1 tablespoon Fresh Thyme or dried thyme if fresh isn't available
  • 1 teaspoon Garlic Powder or onion powder
  • 1 pinch Salt
  • 1 pinch Black Pepper to taste
For Frying
  • 2 tablespoons Vegetable Oil or a mix of butter and oil
Optional Toppings
  • 1 cup Arugula
  • 1 whole Avocado sliced
  • 2 large Eggs fried or soft-boiled

Method
 

Cooking Steps
  1. Heat the skillet over medium heat for about 2 minutes and add vegetable oil to coat the bottom.
  2. In a mixing bowl, whisk together eggs, almond milk, parsley, thyme, garlic powder, salt, and black pepper.
  3. Slice the challah bread into thick pieces and dip each slice into the egg mixture for 10-30 seconds.
  4. Cook soaked bread slices in the skillet for 2-3 minutes on each side until golden brown and crispy.
  5. Serve topped with arugula, avocado slices, and optionally a fried or soft-boiled egg.
