  1. In a mixing bowl, combine creamy peanut butter, coconut flour, and maple syrup. Stir until smooth.
  2. Scoop out the peanut butter mixture and form small egg shapes about 1 inch in diameter. Place on a parchment-lined cookie sheet.
  3. Transfer the cookie sheet to the freezer and chill for 30 minutes to firm up.
  4. In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in the microwave until melted and smooth, about 1-2 minutes.
  5. Using forks, dip each frozen egg into the melted chocolate, allowing excess to drip back into the bowl. Place them back on the parchment paper.
