Step-by-Step Instructions
  1. Begin by creaming 1 cup of softened butter and 1/2 cup of honey until fluffy and light, about 3-5 minutes. Stir in 1/2 cup of molasses, then gradually mix in 2 cups of flour, 1/2 teaspoon of salt, and spices. Mix in orange zest and vanilla extract until a soft dough forms.
  2. Shape the dough into a log or desired shapes. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat your oven to 350°F (180°C). Once chilled, slice the dough into 1/2 inch thick rounds and place on parchment-lined baking sheets. Bake for 12-14 minutes until edges are golden brown.
  4. Prepare the glaze by whisking together 1 cup of icing sugar, 2 tablespoons of orange juice, and a splash of Cointreau, if desired. Drizzle over cookies and return to the oven for an additional 3-5 minutes.
