  • 4 medium Russet Potatoes cut into thick strips
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder
Chili Topping
  • 2 cups Chili homemade or canned
  • 1 cup Shredded Cheddar Cheese or pepper jack for a spicy kick
Garnishing
  • 1/4 cup Chopped Green Onions
  • 1/2 cup Sour Cream

Method
 

Cooking Steps
  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel (if desired) the russet potatoes, then cut them into thick, even strips. Pat dry with paper towels.
  3. In a large bowl, toss the potato strips with olive oil, garlic powder, salt, and pepper. Let rest for a couple of minutes.
  4. Spread the seasoned fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through.
  5. While fries bake, heat the chili in a saucepan over medium heat for about 5-7 minutes until bubbling.
  6. Once fries are baked, remove from oven and sprinkle shredded cheddar cheese over the hot fries. Return to oven for 5 minutes to melt.
  7. After cheese has melted, spoon warm chili over the fries and garnish with sour cream and chopped green onions. Serve immediately.
