  • 8 oz Cream Cheese softened
  • 1 can Diced Green Chilies or fresh jalapeños for extra heat
  • 1 cup Cheddar Cheese can mix with Monterey Jack
  • 1/2 cup Red Onion diced
  • 1 each Bell Pepper any color
  • 1/2 cup Sour Cream or Greek yogurt
  • 1 tsp Paprika smoked paprika for extra flavor
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Cayenne to taste
For the Dipping Sauce
  • 1/2 cup Basil Pesto store-bought or homemade

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cream cheese, diced green chilies, cheddar cheese, red onion, bell pepper, sour cream, paprika, garlic powder, onion powder, and cayenne. Blend until smooth.
  3. Spread the filling evenly on each tortilla, then roll tightly from one end.
  4. Slice each rolled tortilla diagonally at a 45-degree angle into five pieces.
  5. Place the sliced antojitos on the baking sheet and bake for 8 minutes, then broil on high for 5 minutes.
  6. Serve warm with basil pesto for dipping.
