Preheat your oven to 400°F.
In a large bowl, whisk together the melted butter, honey, minced garlic, salt, pepper, thyme, and lemon juice until well combined.
Add the baby carrots to the bowl and toss them in the honey garlic mixture until they are evenly coated.
Spread the carrots in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
