  1. Start by heating a large skillet over medium-high heat for about 2 minutes. Once hot, add 1 tablespoon of sesame oil, swirling it around to coat the bottom of the skillet evenly.
  2. Add 1 pound of ground chicken and the white parts of the green onions to the skillet. Break the chicken apart with a spatula as it cooks for about 5-7 minutes, or until the meat is no longer pink and begins to brown.
  3. Reduce the heat to medium and stir in 2 minced garlic cloves, 1 tablespoon of grated fresh ginger, and the green parts of the onions. Sauté everything together for 2-3 minutes until fragrant and the onions start to soften.
  4. In a small bowl, whisk together 3/4 cup of sweet chili sauce, 2 tablespoons of light brown sugar, 3 tablespoons of low-sodium soy sauce, and 2 tablespoons of rice wine vinegar.
