Ingredients
  

  • 2 medium zucchinis sliced into 1/4-inch rounds
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley optional, for garnish

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine the sliced zucchini, olive oil, garlic powder, salt, and black pepper. Toss until the zucchini is evenly coated.
  3. Place the zucchini slices directly on the grill grates. Grill for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
  4. During the last minute of grilling, sprinkle the grated Parmesan cheese over the zucchini slices. Close the grill lid to allow the cheese to melt slightly.
  5. Remove the zucchini from the grill and transfer to a serving platter. Garnish with chopped parsley if desired.
