- Preheat your grill to medium-high heat.
- In a large bowl, combine the sliced zucchini, olive oil, garlic powder, salt, and black pepper. Toss until the zucchini is evenly coated.
- Place the zucchini slices directly on the grill grates. Grill for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
- During the last minute of grilling, sprinkle the grated Parmesan cheese over the zucchini slices. Close the grill lid to allow the cheese to melt slightly.
- Remove the zucchini from the grill and transfer to a serving platter. Garnish with chopped parsley if desired.
