Ingredients
  

Marinade
  • 1.5 pounds dark meat chicken cut into 1-inch chunks
  • 4 cloves garlic finely chopped
  • 2 inches fresh ginger finely chopped
  • ½ cup soy sauce use gluten-free for gluten sensitivity
  • ¼ cup dark soy sauce or substitute with light soy sauce and sugar
  • ½ cup coconut cream or full-fat coconut milk
  • 2 tablespoons sugar or honey/maple syrup for alternatives
  • 2 tablespoons oyster sauce can substitute with soy sauce and sugar mix
Glaze
  • 2 tablespoons honey or melted sugar as an alternative
Optional Sauce
  • ¼ cup peanut butter unsweetened natural
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon Thai red curry paste adjust to spice preference
  • 1 tablespoon maple syrup or substitute with honey
Garnish
  • ¼ cup crushed peanuts optional but recommended

Method
 

Steps
  1. Prepare Marinade: Chop garlic and ginger, then mix with soy sauce, dark soy sauce, coconut cream, sugar, and oyster sauce in a bowl until smooth.
  2. Marinate Chicken: Cut chicken into chunks, place in a bag or bowl, and add marinade. Seal and refrigerate for at least 2 hours.
  3. Soak Skewers: If using wooden skewers, soak in water for at least 30 minutes. Preheat grill to high heat (500°F/260°C).
  4. Skewer Chicken: Remove chicken from marinade and thread pieces onto soaked skewers tightly but with space in between.
  5. Preheat Grill: Ensure grill reaches around 500°F (260°C) before adding skewers.
  6. Grill Skewers: Grill skewers for 15-18 minutes, turning every 2-3 minutes until caramelized and chicken reaches 165°F.
  7. Glaze with Coconut Cream: Brush skewers with extra coconut cream in the last few minutes of grilling.
  8. Serve: Let skewers rest for a few minutes after grilling, then serve warm, optionally with peanut sauce.
