  • 1/2 cup Mayonnaise Greek yogurt can be a substitute
  • 1/4 cup Sour Cream Low-fat versions can be used
  • 1 tablespoon Lemon Juice
  • 1 clove Minced Garlic Fresh
For Serving
  • 1 medium Avocado Serve mashed or sliced
  • 1 tablespoon Sesame Seeds Optional garnish
  • 2 tablespoons Green Onions Chopped, optional garnish

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine thawed large shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper. Let marinate for 10 minutes.
  2. Mix frozen corn, diced red onion, minced jalapeño, chopped cilantro, lime juice, and salt in another bowl. Stir until well combined.
  3. Preheat grill to medium heat. Grill marinated shrimp for 2-3 minutes on each side until opaque and slightly curled.
  4. In a small bowl, whisk together mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and pepper until smooth.
  5. Divide corn salsa into serving bowls, layer grilled shrimp on top, add avocado, and drizzle with garlic sauce. Garnish if desired.
