Ingredients
  

For the Burger Patties
  • 1 lb Ground Chicken Can substitute with ground turkey or a vegan alternative.
  • 3 tbsp Gochujang Spicy Korean chili paste.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Ground Pepper To taste.
For the Kimchi Bacon Jam
  • 4 strips Bacon Can use turkey bacon.
  • 1 cup Kimchi Alternatively, use sauerkraut or pickles.
  • 2 tbsp Brown Sugar Omit for a less sweet jam.
For Assembly
  • 4 pieces Buns Toasted for added crunch.
  • 1 cup Cucumber Thinly sliced; can swap for pickles.
  • 1/4 cup Cilantro Optional.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, gochujang, salt, and ground pepper. Mix gently until combined and form into 4 equal patties.
  2. In a medium skillet, cook bacon strips over medium heat until crispy. Remove bacon, leaving drippings. Add chopped kimchi and brown sugar, cooking until caramelized.
  3. Increase heat to medium-high, add burger patties to the skillet, and cook for 4-5 minutes on each side until golden brown and 165°F internally.
  4. Slice and toast the buns in a separate skillet or under a broiler for about 2 minutes until golden.
  5. Assemble by spreading condiment on the bottom half of each bun, topping with a patty, kimchi bacon jam, cucumber, and cilantro. Top with the other half of the bun.
