Step-by-Step Instructions
  1. Begin by washing and peeling 2 large sweet potatoes. Cut them into 1-inch cubes and place them in a large mixing bowl.
  2. In a separate medium bowl, combine 3 minced garlic cloves, ½ cup of grated Parmesan cheese, 1 teaspoon of dried Italian seasoning, and a generous pinch of salt and black pepper. Mix well.
  3. Drizzle 2 tablespoons of olive oil over the cubed sweet potatoes. Toss them gently until they’re thoroughly coated with oil, then add the garlic Parmesan mixture and continue tossing.
  4. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper. Spread the coated sweet potatoes in a single layer on the baking sheet.
  5. Place the baking sheet in the preheated oven and roast the sweet potatoes for 20-25 minutes, tossing halfway through.
  6. Once roasted, remove the sweet potatoes from the oven. Drizzle with melted butter, if desired, and sprinkle freshly chopped parsley over the top before serving warm.
