- Begin by washing and peeling 2 large sweet potatoes. Cut them into 1-inch cubes and place them in a large mixing bowl.
- In a separate medium bowl, combine 3 minced garlic cloves, ½ cup of grated Parmesan cheese, 1 teaspoon of dried Italian seasoning, and a generous pinch of salt and black pepper. Mix well.
- Drizzle 2 tablespoons of olive oil over the cubed sweet potatoes. Toss them gently until they’re thoroughly coated with oil, then add the garlic Parmesan mixture and continue tossing.
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper. Spread the coated sweet potatoes in a single layer on the baking sheet.
- Place the baking sheet in the preheated oven and roast the sweet potatoes for 20-25 minutes, tossing halfway through.
- Once roasted, remove the sweet potatoes from the oven. Drizzle with melted butter, if desired, and sprinkle freshly chopped parsley over the top before serving warm.
