Ingredients
  

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1/4 cup chopped fresh parsley or 2 tablespoons dried parsley
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup marinara sauce for topping

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, parsley, milk, egg, salt, black pepper, onion powder, and Italian seasoning. Mix until well combined, but be careful not to overmix.
  3. Divide the mixture into 6 equal portions and shape each portion into a small loaf, placing them on the prepared baking sheet.
  4. Spoon a little marinara sauce on top of each meatloaf.
  5. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaves are cooked through.
  6. Let them rest for 5 minutes before serving.

Notes
