  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Ground Cinnamon
  • 1 pinch Cayenne Pepper adjust according to spice tolerance
For the Aromatics and Rice
  • 1 chopped Onion
  • 4 cloves Garlic minced
  • 1.5 cups Basmati Rice rinsed
  • 3 cups Chicken Broth
For the Garnish
  • 1/4 cup Fresh Parsley chopped
  • 1 slices Lemon Wedges

Step-by-Step Instructions
  1. Heat Olive Oil: In a large pot, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  2. Season Chicken: Mix together spices and coat chicken thighs evenly with the spice mix.
  3. Brown Chicken: Add seasoned chicken to the pot and cook until golden-brown, about 5-7 minutes each side.
  4. Sauté Aromatics: Remove chicken and sauté chopped onion and minced garlic until translucent.
  5. Add Rice: Stir in rinsed basmati rice, coating it with the oil and spices for 1-2 minutes.
  6. Combine: Return browned chicken to the pot and mix with rice.
  7. Add Broth: Pour in chicken broth and bring to a boil.
  8. Simmer: Cover and let simmer for 15-20 minutes until liquid is absorbed and rice is tender.
  9. Rest: Remove from heat and let sit covered for 10 minutes before serving.
  10. Fluff & Serve: Fluff rice with a fork, garnish with parsley and serve with lemon wedges.
