Ingredients

For the Dough
  • 3 cups all-purpose flour Can be substituted with whole wheat flour for a denser loaf.
  • 1.5 teaspoons kosher salt Use kosher salt for better flavor control.
  • 1 teaspoon instant yeast Can be substituted with active dry yeast; activate in warm water for 5-10 minutes before use.
  • 1.5 cups warm water Ensure water is warm but not hot to avoid killing the yeast.
For the Flavor
  • 4 cloves minced garlic Increase quantity for a more intense garlic taste.
  • 1 handful fresh herbs (e.g., rosemary, thyme) Varieties can be mixed based on preference.
  • 1 tablespoon olive oil Can use melted butter for a richer flavor.

Equipment

  • Dutch oven
  • Mixing bowl
  • Whisk
  • wooden spoon
  • plastic wrap
  • wire rack

Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine 3 cups of all-purpose flour, 1.5 teaspoons of kosher salt, and 1 teaspoon of instant yeast. Use a whisk to blend everything thoroughly until well mixed.
  2. Pour in 1.5 cups of warm water along with 4 cloves of minced garlic and a handful of your favorite chopped fresh herbs, such as rosemary or thyme. Stir the mixture with a wooden spoon until a shaggy, sticky dough forms.
  3. Cover the bowl tightly with plastic wrap and let it sit at room temperature for 12 to 18 hours.
  4. About 30 minutes before you're ready to bake, preheat your oven to 450°F (230°C). Place a Dutch oven (with the lid on) inside to heat up.
  5. Once preheated, carefully remove the hot Dutch oven and add 1 tablespoon of olive oil, swirling it around to coat the bottom.
  6. Transfer the rested dough onto a well-floured surface. Shape it into a ball.
  7. Place the shaped dough into the preheated Dutch oven. Cover with the lid and bake for 30 minutes.
  8. After 30 minutes, remove the lid and continue to bake for another 15 to 20 minutes until the bread turns a deep golden brown.
  9. Once baked, carefully transfer the bread to a wire rack to cool for at least 20 minutes.
