Ingredients
  

  • 1 can 15 ounces whole kernel corn, drained
  • 1 can 15 ounces black beans, rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell pepper any color
  • 1/2 cup red onion finely chopped
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 packet 1 ounce ranch dressing mix
  • 1 bag 9.25 ounces Fritos corn chips

Method
 

  1. In a large mixing bowl, combine the drained corn, black beans, cherry tomatoes, cheddar cheese, bell pepper, and red onion.
  2. In a separate bowl, mix together the sour cream, mayonnaise, and ranch dressing mix until well combined.
  3. Pour the dressing over the corn mixture and stir gently until everything is evenly coated.
  4. Just before serving, fold in the Fritos corn chips for added crunch.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.

Notes
