Start by slicing the fresh pineapple into rings, removing the core from each ring. Pat the rings dry with paper towels to remove excess moisture.
In a mixing bowl, whisk together the flour, baking powder, salt, and 1/2 teaspoon of cinnamon.
In another bowl, combine the milk, egg, and vanilla extract. Mix well.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be thick but smooth.
Heat about 1 inch of vegetable oil in a large skillet over medium heat until hot (around 350°F).
Dip each pineapple ring into the batter, allowing any excess to drip off, and carefully place it in the hot oil.
Fry the rings for about 2-3 minutes on each side, or until golden brown. Remove and place on a paper towel-lined plate to drain excess oil.
In a small bowl, mix together the granulated sugar and 1 teaspoon of cinnamon. While the pineapple rings are still warm, sprinkle the cinnamon sugar mixture over them.
