Muffin Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or non-stick spray.
- Mash the ripe bananas in a large mixing bowl until smooth, about 2-3 minutes.
- Mix in sugar, Greek yogurt (or applesauce), and the egg until well combined.
- In another bowl, whisk together flour, cocoa powder, baking powder, and a pinch of salt.
- Gradually fold the dry ingredients into the wet mix, being careful not to overmix.
- Fold in chocolate chips until evenly distributed.
- Fill muffin cups about 2/3 full, adding extra chips on top if desired.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the tin for about 5 minutes before transferring to a wire rack.
