  • 2 cups cottage cheese
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • Powdered sugar for dusting (optional)

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large mixing bowl, combine the cottage cheese, softened butter, and granulated sugar. Mix until well combined.
  3. Add the eggs, vanilla extract, baking powder, baking soda, and salt to the cottage cheese mixture. Stir until smooth.
  4. Gradually add the all-purpose flour, mixing until just combined. Be careful not to overmix.
  5. Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  9. If desired, dust the top with powdered sugar before slicing and serving.
