Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice about 2 limes
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped (for garnish)
  • Lime wedges for serving

Method
 

  1. In a medium bowl, whisk together olive oil, lime juice, honey, minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper until well combined.
  2. Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
  4. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  5. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  6. Serve the chicken garnished with chopped cilantro and lime wedges.
