Method
 

Step-by-Step Instructions
  1. In a medium saucepan, combine ½ cup of unsalted butter, ½ cup of milk, and 2 cups of granulated sugar. Place over medium heat, stirring continuously until boiling and sugar is dissolved, about 5 minutes.
  2. Remove from heat and stir in 1 teaspoon of vanilla extract, followed by 3 cups of rolled oats, 1 cup of shredded coconut, and a pinch of salt. Mix well until combined.
  3. Prepare a parchment-lined baking sheet. Use a tablespoon or cookie scoop to drop spoonfuls of the mixture onto the sheet, leaving space between each.
  4. Allow the cookies to set at room temperature for 1-2 hours or put in the freezer for 30-60 minutes to speed up the process.
