- In a mixing bowl, combine instant yeast and honey with warm water. Let sit for about 5 minutes until foamy.
- Stir in all-purpose flour, salt, and olive oil until a sticky dough forms. Cover and let rise for 45–60 minutes.
- Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin with olive oil. Scoop the dough into muffin cups, and drizzle additional olive oil on top.
- Sprinkle chopped rosemary, minced garlic, and flaky sea salt on top. Bake for 18–20 minutes, rotating halfway through.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack. Best enjoyed warm.
