Step-by-Step Instructions for Fajita Casserole
  1. Preheat your oven to 175°C (350°F) and coat a 9x13-inch baking dish with nonstick spray.
  2. In a large bowl, combine shredded chicken, dry rice, cream of chicken soup, sour cream, mixed vegetables, diced tomatoes, chicken stock, and fajita spice mix. Stir well.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Cover the dish with aluminum foil and bake for 35 minutes.
  5. Remove the foil, sprinkle cheddar on top, and bake uncovered for another 10 minutes until cheese is melted.
  6. Let the casserole cool for a few minutes, slice, and serve.
