  • 1 pound Boneless, Skinless Chicken Breasts
  • 2 tablespoons Cornstarch for coating
  • 1/2 teaspoon Salt
  • 1 teaspoon Freshly Ground Black Pepper
For the Vegetables
  • 1 medium Onion sliced
  • 1 cup Bell Pepper (Red or Green) sliced
  • 1 cup Mushrooms (Shiitake or Button) sliced
  • 3 cloves Garlic minced
  • 2 tablespoons Green Onions finely chopped, for garnish
For the Sauce
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Oyster Sauce or hoisin sauce for vegetarian
  • 1 tablespoon Honey
  • 1 tablespoon Rice Vinegar or apple cider vinegar
  • 2 tablespoons Vegetable Oil for frying

Step-by-Step Instructions
  1. Slice boneless, skinless chicken breasts into bite-sized pieces. Coat the chicken with cornstarch, salt, and freshly ground black pepper.
  2. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the coated chicken pieces and stir-fry for 4-5 minutes until golden brown.
  3. Add remaining tablespoon of oil to the skillet, toss in the onion and bell pepper, stir-fry for 2-3 minutes.
  4. Incorporate mushrooms and minced garlic, stir for an additional 2-3 minutes until tender.
  5. Whisk together soy sauce, oyster sauce, honey, rice vinegar, and black pepper in a bowl, then pour over vegetables.
  6. Return cooked chicken to the skillet, toss gently with vegetables and sauce for 1-2 minutes.
  7. Remove from heat, transfer to a dish, and garnish with chopped green onions. Serve immediately.
