  • 1 tsp Pure Vanilla Extract Use pure, not imitation.
  • 3 large Large Eggs Room temperature.
Ganache Topping
  • 1 cup Semi-Sweet Chocolate Chips Can substitute with dark or milk chocolate.
  • 1/2 cup Heavy Cream Heated.

Method
 

Prepare the Crust
  1. Preheat the oven to 325°F (163°C). Blend Oreo cookies into fine crumbs, then mix in melted unsalted butter. Press mixture into a greased 9x9-inch pan. Bake for 12 minutes, then cool.
Make the Cheesecake Filling
  1. Melt the chocolate bar until smooth and let cool. Beat cream cheese, sugar, and cocoa powder until creamy. Gradually mix in melted chocolate, heavy cream, and vanilla, incorporating eggs one at a time.
Bake Cheesecake
  1. Pour cheesecake filling over cooled crust. Bake for 40-50 minutes until edges are set. Leave the door ajar for 20 minutes, then cool completely and refrigerate for at least 6 hours.
Prepare Ganache
  1. Heat heavy cream until steaming, then pour over chocolate chips. Let sit for 5 minutes before stirring until smooth.
Assemble Bars
  1. Remove cheesecake from pan and pour ganache over the top. Freeze for 10 minutes, then slice into squares to serve.
