Method
 

Step-by-Step Instructions for Christmas Tree Meringues
  1. Preheat your oven to 100°C (210°F) and line baking sheets with parchment paper or silicone mats.
  2. Whisk egg whites in a large bowl at medium speed until foamy and just starting to stiffen, about 3–4 minutes.
  3. Gradually add half of the caster sugar and cream of tartar while whisking. Mix until the sugar is fully incorporated, about 2 minutes.
  4. Add remaining sugar and increase mixer speed to medium-high. Whisk for 6–8 minutes until stiff peaks form.
  5. Gently fold in green food coloring gel until evenly distributed throughout the meringue.
  6. Transfer meringue to a piping bag fitted with a star nozzle.
  7. Pipe the meringue into Christmas tree shapes on the prepared baking sheets.
  8. Decorate each meringue with sprinkles before baking.
  9. Bake for 1 hour. Turn off oven and let meringues cool completely inside, preferably overnight.
  10. Carefully remove meringues from parchment paper once cooled and store in an airtight container.
