Step-by-Step Instructions for Christmas Tree Meringues
- Preheat your oven to 100°C (210°F) and line baking sheets with parchment paper or silicone mats.
- Whisk egg whites in a large bowl at medium speed until foamy and just starting to stiffen, about 3–4 minutes.
- Gradually add half of the caster sugar and cream of tartar while whisking. Mix until the sugar is fully incorporated, about 2 minutes.
- Add remaining sugar and increase mixer speed to medium-high. Whisk for 6–8 minutes until stiff peaks form.
- Gently fold in green food coloring gel until evenly distributed throughout the meringue.
- Transfer meringue to a piping bag fitted with a star nozzle.
- Pipe the meringue into Christmas tree shapes on the prepared baking sheets.
- Decorate each meringue with sprinkles before baking.
- Bake for 1 hour. Turn off oven and let meringues cool completely inside, preferably overnight.
- Carefully remove meringues from parchment paper once cooled and store in an airtight container.

Notes
These meringues are best enjoyed fresh, but can be placed in a low-heat oven for 10 minutes to regain some crispness if needed.
