Step-by-Step Instructions
  1. In a large mixing bowl, combine 1 cup of vanilla protein powder, 1/4 cup of coconut flour, 1/4 cup of cocoa powder, and 1/4 cup of monk fruit sweetener. Whisk these dry ingredients together until well blended.
  2. Add 1/2 cup of softened low-fat cream cheese to the dry mixture along with 2 teaspoons of red coloring gel. Mix until fully incorporated.
  3. Gradually pour in 1/4 cup of unsweetened almond milk while kneading the mixture for about 2-3 minutes until you have a soft dough.
  4. Transfer the dough onto a sheet of plastic wrap and shape it into a rectangular mound, about 1 inch thick. Wrap tightly and freeze for 30 minutes.
  5. After freezing, cut the dough into 7 equal bars. Place the cut bars back in the freezer.
  6. In a microwave-safe bowl, heat 1/2 cup of white chocolate chips in 20-second bursts until fully melted.
  7. Dip each bar into the melted chocolate, then place on parchment paper to set.
