  • 2 cups Cooked Rotisserie Chicken shredded
  • 0.5 cups Red Onion diced
For the Tzatziki Dressing
  • 1 cup Plain Greek Yogurt substitute with regular yogurt if needed
  • 2 tablespoons Chopped Fresh Dill or ⅔ teaspoon dried dill for every 2 tablespoons of fresh
  • 1 tablespoon Lemon Juice preferably fresh
  • 2 cloves Garlic minced
  • to taste Salt
  • to taste Pepper

Step-By-Step Instructions
  1. Grate one fresh cucumber into a bowl and squeeze out excess moisture using a paper towel.
  2. In a mixing bowl, combine squeezed cucumber, yogurt, dill, lemon juice, minced garlic, salt, and pepper, stirring to create the dressing.
  3. Shred rotisserie chicken and fold into the tzatziki mixture along with diced onion. Toss until well combined.
  4. Serve over lettuce, in pita, or alongside crackers. Store leftovers in an airtight container in the fridge for up to 5 days.
