  • 2 tablespoons Fresh Oregano Leaves optional

Step-by-Step Instructions
  1. Prepare Tomatoes: Drain oil-packed sun dried tomatoes. If using plain, soak in hot water for 20 minutes, then drain.
  2. Blend Ingredients: In a food processor, combine sun dried tomatoes, pine nuts, vegan parmesan, basil, garlic, and optional oregano. Add olive oil or water and pulse until roughly mixed.
  3. Process until Smooth: Blend on high speed for 30-45 seconds until smooth. Add more olive oil or reserved soaking water if too thick.
  4. Season and Store: Adjust salt to taste and transfer to an airtight container. Refrigerate until ready to use.
