  • 4 medium Red Bell Peppers Sweet and vibrant
  • 2 tablespoons Olive Oil Substitute with avocado oil if desired
  • 2 cloves Garlic Fresh; use garlic powder if necessary
  • 2 tablespoons Lemon Juice Brightens flavor; lime juice can be used
  • to taste Salt Opt for sea salt or kosher salt
  • to taste Pepper
For Cooking the Fish
  • 4 fillets Tilapia Substitute with cod or haddock

Method
 

Preparation and Roasting
  1. Preheat oven to 400°F (200°C) and gather all ingredients and equipment.
  2. Slice red bell peppers into quarters. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes until soft and charred.
  3. Let the roasted peppers cool, then blend in a blender with garlic and lemon juice until smooth.
Cooking the Fish
  1. Heat skillet over medium heat, add olive oil, and place tilapia fillets in the skillet. Cook for 3-4 minutes per side until golden brown.
  2. Pour roasted pepper sauce over cooked tilapia and simmer for 1-2 minutes before serving.
