Preparation and Roasting
- Preheat oven to 400°F (200°C) and gather all ingredients and equipment.
- Slice red bell peppers into quarters. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes until soft and charred.
- Let the roasted peppers cool, then blend in a blender with garlic and lemon juice until smooth.
Cooking the Fish
- Heat skillet over medium heat, add olive oil, and place tilapia fillets in the skillet. Cook for 3-4 minutes per side until golden brown.
- Pour roasted pepper sauce over cooked tilapia and simmer for 1-2 minutes before serving.
