- In a large mixing bowl, whisk together the cottage cheese and eggs until smooth and creamy.
- Stir in the shredded mozzarella, reserving a small handful for topping later. Add mini turkey pepperoni, most of the grated parmesan, Italian seasoning, garlic powder, salt, and pepper. Mix thoroughly.
- Pour the mixture into the greased baking dish and spread evenly.
- Top with the remaining mozzarella and turkey pepperoni. Bake for 30-35 minutes until the top is bubbly and golden brown.
