- Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper.
 - In a large mixing bowl, combine granulated sugar, light corn syrup, melted unsalted butter, vanilla extract, and a large egg. Whisk until smooth and reserve 2 tablespoons.
 - Stir in the chopped pecans until fully coated.
 - Open the tube of Crescent Rolls and unroll the dough onto a clean surface. Separate it into triangles. Place 2-3 tablespoons of filling on the wide end.
 - Roll each triangle tightly from the wide end to the narrow end, ensuring the filling is enclosed.
 - Transfer the rolls to the prepared baking sheet and bake for about 8 minutes until light golden brown.
 - Brush the tops with the reserved sugar mixture, then return to the oven for another 5 minutes.
 - Once done, let them cool slightly before serving. Optionally sprinkle extra pecans and drizzle with caramel sauce.
