- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt. Stir thoroughly until everything is fully blended.
- In a small saucepan over low heat, melt the natural peanut butter and honey together. Stir constantly until the mixture is smooth, approximately 3-5 minutes. Remove from heat and stir in the vanilla extract.
- Pour the warm wet mixture over the dry ingredients in your mixing bowl. Use a sturdy spatula to combine everything until fully coated.
- Using a cookie scoop or your hands, form the dough into balls and place them on the prepared baking sheet, flattening each ball slightly.
- Place the baking sheet in the oven and bake for 12-15 minutes until golden brown and firm. Keep an eye on them as they approach the 12-minute mark.
- Once baked, remove the cookies from the oven and allow them to cool completely on a wire rack.
