Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt. Stir thoroughly until everything is fully blended.
  3. In a small saucepan over low heat, melt the natural peanut butter and honey together. Stir constantly until the mixture is smooth, approximately 3-5 minutes. Remove from heat and stir in the vanilla extract.
  4. Pour the warm wet mixture over the dry ingredients in your mixing bowl. Use a sturdy spatula to combine everything until fully coated.
  5. Using a cookie scoop or your hands, form the dough into balls and place them on the prepared baking sheet, flattening each ball slightly.
  6. Place the baking sheet in the oven and bake for 12-15 minutes until golden brown and firm. Keep an eye on them as they approach the 12-minute mark.
  7. Once baked, remove the cookies from the oven and allow them to cool completely on a wire rack.
