- In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, paprika, cinnamon, salt, and pepper. Let it sit for a few minutes.
- Cut the chicken breast into strips and place them in the bowl of marinade. Toss to coat thoroughly and refrigerate for at least 1 hour or overnight.
- Preheat a skillet or grill pan over medium-high heat and cook the marinated chicken strips for 5-7 minutes on each side, until golden brown and cooked through.
- Warm the pita bread in a separate pan over low heat for about 5 minutes until soft.
- Spread tzatziki sauce onto the warm pita, layer with cooked chicken, sliced red onion, cucumber, and tomato.
- Roll up the pita and serve immediately, optionally garnishing with chopped parsley.
