Ingredients
  

For the Chicken Marinade
  • 1 pound Chicken Breast Can substitute with chicken thighs.
  • 2 tablespoons Olive Oil Can substitute with avocado oil.
  • 3 tablespoons Lemon Juice Lime juice can be a substitute.
  • 3 cloves Garlic Can use garlic powder (1/4 tsp per clove).
  • 1 tablespoon Oregano Dried thyme or Italian seasoning can work.
  • 1 teaspoon Cumin Coriander can be used for a milder flavor.
  • 1 teaspoon Paprika Switch to smoked paprika for more smokiness.
  • 1/2 teaspoon Cinnamon Nutmeg can be substituted.
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
For the Gyros Assembly
  • 4 pieces Pita Bread Gluten-free flatbreads or lettuce wraps can be used.
  • 1 cup Tzatziki Sauce Homemade or store-bought.
  • 1 medium Red Onion Shallots can be used for a milder flavor.
  • 1 medium Cucumber Zucchini can substitute.
  • 1 large Tomato Roasted red peppers can be a different option.
  • 1/4 cup Fresh Parsley Optional for garnish.

Method
 

Preparation
  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, paprika, cinnamon, salt, and pepper. Let it sit for a few minutes.
  2. Cut the chicken breast into strips and place them in the bowl of marinade. Toss to coat thoroughly and refrigerate for at least 1 hour or overnight.
  3. Preheat a skillet or grill pan over medium-high heat and cook the marinated chicken strips for 5-7 minutes on each side, until golden brown and cooked through.
  4. Warm the pita bread in a separate pan over low heat for about 5 minutes until soft.
  5. Spread tzatziki sauce onto the warm pita, layer with cooked chicken, sliced red onion, cucumber, and tomato.
  6. Roll up the pita and serve immediately, optionally garnishing with chopped parsley.
