  • 4 fillets Salmon Fillets 1-inch thick
  • 1 tablespoon Olive Oil
For the Filling
  • 2 cups Spinach fresh or well-drained frozen
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Paprika smoked is preferable
  • 1/4 teaspoon Cayenne Pepper omit for milder dish
  • 1 cup Feta Cheese or goat cheese
  • 1/2 cup Parmesan Cheese or pecorino romano
  • 1/2 cup Roasted Red Peppers or fresh bell peppers
  • 1 teaspoon Garlic Powder or fresh minced garlic

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet.
  2. Pat the salmon fillets dry and place them skin-side down on the baking sheet.
  3. Carefully slice each fillet to create a pocket for stuffing.
  4. In a skillet, heat olive oil and sauté the spinach with seasoning for 3-5 minutes.
  5. Remove from heat and mix in feta, Parmesan, red peppers, and garlic powder.
  6. Brush fillets with olive oil and season with salt and pepper.
  7. Stuff the spinach-feta mixture into the salmon pockets.
  8. Bake for 12-17 minutes until salmon flakes easily at 145°F (63°C).
  9. Let rest for a few minutes before serving warm with sides.
