- Preheat your oven to 350°F (175°C).
- In a medium saucepan, add peeled and diced apples with cinnamon and sugar. Cook for about 10 minutes until the apples are tender and fragrant.
- Lay out your tortillas, spoon the warm apple filling onto each, and roll them up tightly. Place them seam-side down in a greased baking dish.
- Drizzle caramel sauce over the enchiladas, either store-bought or homemade.
- Bake for 20-25 minutes until heated through and tortillas are golden.
- Remove any cover during the last 5 minutes to crisp the tops.
- Allow to cool slightly, then serve warm topped with caramel sauce and vanilla ice cream.
