  • 4 cups Apples a mixture of sweet and tart varieties
  • 1 teaspoon Cinnamon
  • 1/2 cup Sugar
For the Tortillas
  • 8 pieces Flour or Corn Tortillas
To Serve
  • 1 cup Caramel Sauce or store-bought
  • 4 scoops Vanilla Ice Cream
Optional Add-Ins
  • 1/2 teaspoon Ginger optional
  • 1/2 teaspoon Allspice optional

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, add peeled and diced apples with cinnamon and sugar. Cook for about 10 minutes until the apples are tender and fragrant.
  3. Lay out your tortillas, spoon the warm apple filling onto each, and roll them up tightly. Place them seam-side down in a greased baking dish.
  4. Drizzle caramel sauce over the enchiladas, either store-bought or homemade.
  5. Bake for 20-25 minutes until heated through and tortillas are golden.
  6. Remove any cover during the last 5 minutes to crisp the tops.
  7. Allow to cool slightly, then serve warm topped with caramel sauce and vanilla ice cream.
