  • 1 large Onion preferably Vidalia
  • 1 tablespoon Sugar optional
  • 1 teaspoon Salt sea salt works beautifully
For the Toppings
  • 8 ounces Goat Cheese or feta for a different taste
  • 8 ounces Fresh Mozzarella Cheese part-skim for a lighter option
  • 2 tablespoons Fresh Thyme Leaves or oregano/basil for variety
  • 2 tablespoons Balsamic Vinegar or red wine vinegar
  • 1 tablespoon Honey optional, maple syrup for vegan
  • 1 teaspoon Freshly Cracked Black Pepper
  • 2 cups Fresh Arugula or spinach

Method
 

Preparation Steps
  1. Preheat your oven to 475°F (245°C) and place a pizza stone inside if you have one.
  2. In a large skillet, heat olive oil over medium heat. Add sliced onions, salt, and sugar, cooking for 20-25 minutes until golden brown.
  3. Roll out your pizza dough on a floured surface to the desired thickness and transfer it to the preheated pizza stone or a prepared baking sheet.
  4. Spread caramelized onions on the dough, crumble goat cheese, and add mozzarella slices. Top with thyme, drizzle with balsamic, and honey if using.
  5. Bake the pizza for 12-15 minutes until the crust is golden and cheese is bubbling.
  6. Remove from the oven and cool slightly. Top with arugula, drizzle with olive oil, slice, and serve.
