Ingredients
  

For the Cake
  • 2 cups all-purpose flour can substitute for gluten-free flour
  • 1.5 cups granulated sugar brown sugar can add moisture
  • 0.75 cups unsweetened cocoa powder use Dutch-process for smoother taste
  • 1 tbsp baking powder ensure freshness
  • 0.5 tsp baking soda ensure freshness
  • 0.5 tsp salt enhances chocolate flavor
  • 1 large egg can substitute with flax egg for vegan
  • 2 tsp vanilla extract can replace with almond extract
  • 1 cup milk almond or oat milk for dairy-free
  • 0.5 cup vegetable oil melted coconut oil can be used
  • 1 cup hot coffee can substitute with hot water
For the Pistachio Filling
  • 1 cup Kataifi (shredded phyllo) can substitute with finely chopped phyllo crisps
  • 0.5 cup unsalted butter can use vegan butter
  • 1 cup pistachio cream almond or hazelnut can be used
For the Ganache
  • 8 oz chocolate (for ganache) use high-quality dark chocolate
  • 1 cup table cream heavy cream is a suitable alternative

Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C). Grease and line the cake pan with parchment paper.
  2. Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add egg, vanilla extract, milk, and vegetable oil, whisking until smooth. Stir in hot coffee.
  4. Pour the batter into the prepared pan and bake for about 25 minutes. Check for doneness.
  5. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
Pistachio Filling Preparation
  1. In a skillet, heat butter and toast kataifi until golden brown, about 5-7 minutes.
  2. Mix in the pistachio cream until well combined.
Ganache Preparation
  1. Heat table cream in a saucepan until warm, then pour over chopped chocolate.
  2. Let sit for 5 minutes, then whisk until smooth and glossy.
Assembly and Serving
  1. Spread the pistachio filling over the cooled cake and pour ganache over it.
  2. Allow ganache to set slightly before slicing and serving.
  3. Slice the cake and enjoy with each generous serving.
