Biscuit Base
  • 200 g Digestive Biscuits or Graham Crackers Crushed into fine crumbs
  • 100 g Butter Melted
Cheesecake Filling
  • 250 g Cream Cheese Softened
  • 100 g Powdered Sugar Can use a sugar alternative
  • 250 ml Heavy Cream Chilled before whipping
Topping
  • 300 g Mixed Berries (strawberries, blueberries, raspberries) Fresh, seasonal varieties
  • 150 g Cherry Fruit Filling Also can use other fruit preserves

Method
 

Preparation Steps
  1. Crush the biscuits and mix with melted butter. Press into the springform pan and chill for 30 minutes.
  2. Beat cream cheese with powdered sugar until smooth. Whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  3. Pour cheesecake filling over the biscuit base and smooth the top. Cover and chill for at least 4 hours.
  4. Prepare the topping by washing and slicing the berries. Arrange on top of the cheesecake and drizzle with cherry filling.
  5. Serve chilled, slicing into wedges and optionally garnishing with extra berries.
