- In a large mixing bowl, combine the raw almonds, olive oil, maple syrup, and a pinch of salt. Stir well until the almonds are fully coated.
- Spread the coated almonds in a single layer on the prepared baking tray, ensuring there is enough space between them.
- Roast the almonds in the preheated oven for about 12 minutes, watching closely as they caramelize.
- Remove the tray from the oven and let the almonds cool completely on the tray.
- Once cooled, transfer the almonds to a mixing bowl and toss with sugar, an extra pinch of salt, and cinnamon.
