Crock-Pot Chicken Pot Pie: Easy Comfort Food Recipe!

Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup frozen peas
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup heavy cream
  • 1 package 2 crusts refrigerated pie crusts
  • 1 tablespoon cornstarch mixed with 2 tablespoons water optional, for thickening

Method
 

  1. Place the chicken breasts in the Crock-Pot and add the diced carrots, celery, onion, garlic, and frozen peas.
  2. Pour the chicken broth over the ingredients in the Crock-Pot. Add thyme, rosemary, salt, and pepper. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Remove the chicken from the Crock-Pot and shred it with two forks. Return the shredded chicken to the pot.
  5. Stir in the heavy cream. If you prefer a thicker filling, mix the cornstarch with water and add it to the mixture. Cook on high for an additional 30 minutes to thicken.
  6. Preheat the oven to 425°F. Roll out the pie crusts and fit one into a 9-inch pie pan.
  7. Pour the chicken filling into the crust and cover with the second crust. Cut slits in the top crust to allow steam to escape.
  8. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown. Let cool for 10 minutes before serving.

Notes
