Step-by-Step Instructions for Crispy Smashed Carrots
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Fill a large pot with water, add a pinch of salt, and bring it to a gentle boil. Add the carrots and cook for 10–12 minutes until fork-tender. Drain and let cool slightly.
  3. Spread the carrots on the prepared baking sheet and use the bottom of a glass to smash them to an even thickness.
  4. Drizzle with olive oil, then sprinkle with garlic powder, smoked paprika, salt, black pepper, and Parmesan cheese.
  5. Roast in the oven for 20–25 minutes, flipping halfway through, until golden brown and crispy.
