  • 2 large russet potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley optional, for garnish

Method
 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and scrub the potatoes thoroughly. Cut each potato into wedges, about 8 wedges per potato.
  3. In a large bowl, combine the olive oil, minced garlic, salt, black pepper, paprika, and dried oregano. Mix well.
  4. Add the potato wedges to the bowl and toss until they are evenly coated with the garlic oil mixture.
  5. Arrange the potato wedges in a single layer on the prepared baking sheet, making sure they are not overcrowded.
  6. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the wedges are golden brown and crispy.
  7. Remove from the oven and immediately sprinkle the grated Parmesan cheese over the hot wedges. Allow the cheese to melt slightly.
  8. Garnish with chopped fresh parsley if desired and serve hot.
