Ingredients
  

  • 2 large cucumbers diced
  • 4 medium tomatoes diced
  • 1 small red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. In a large bowl, combine the diced cucumbers, tomatoes, red onion, and parsley.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and black pepper until well combined.
  3. Pour the dressing over the vegetable mixture and toss gently to coat all the ingredients evenly.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
