Ground Turkey + Black Bean Filling
  • 2 tsp avocado oil Olive oil can be used instead.
  • 8 oz lean ground turkey Ground chicken or beef can be used.
  • 2 1/2 tsp homemade taco seasoning Store-bought can be used.
  • 1/3 cup chopped onion Yellow or white onions are best.
  • 3/4 cup canned black beans Drained, not rinsed.
  • 4 oz green chiles Jalapeños can be used for more heat.
  • 2 tbsp finely chopped cilantro Omit if not a fan.
Tacos
  • cooking/baking spray or avocado oil Prevents sticking while baking.
  • 6 fajita-sized flour tortillas Corn tortillas may break easily.
  • 1 1/2 cups shredded Monterey Jack cheese Cheddar is a good substitute.

Method
 

Step-by-Step Instructions
  1. Make the Creamy Avocado Sauce: In a blender, combine avocado, sour cream, lime juice, cilantro, kosher salt, and water. Blend until smooth. Set aside.
  2. Cook the Turkey and Onions: Heat avocado oil in a pan. Add ground turkey, taco seasoning, and onion. Sauté until turkey is browned and onions are translucent.
  3. Make the Taco Filling: Stir in black beans and green chiles. Simmer on medium-low for 15 minutes until heated through.
  4. Build the Tacos: Preheat oven to 425°F. Lay tortillas on a baking sheet. Layer cheese, then turkey filling, and fold the tortillas.
  5. Bake: Place in oven and bake for 10-12 minutes until crispy and golden.
  6. Serve: Remove from oven, cool slightly, and serve with the creamy avocado sauce.
