Ingredients
  

  • 2 medium zucchinis cut into fry shapes
  • 1 cup breadcrumbs panko or regular
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg beaten
  • Cooking spray

Method
 

  1. Preheat the air fryer to 400°F.
  2. In a shallow bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper.
  3. In another bowl, dip each zucchini fry into the beaten egg, allowing excess to drip off.
  4. Coat the zucchini fry in the breadcrumb mixture, pressing gently to adhere.
  5. Place the coated zucchini fries in a single layer in the air fryer basket. Spray lightly with cooking spray.
  6. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove from the air fryer and let cool for a few minutes before serving.
