- Begin by washing and peeling the sweet potatoes. Using a mandoline, slice them thinly to ensure even cooking, aiming for about 1/8 inch thick.
 - In a mixing bowl, toss the sweet potato slices with extra virgin olive oil, just enough to coat each slice evenly.
 - In a separate small bowl, combine organic brown sugar, chili powder, ground cumin, and salt. Stir until well blended.
 - If sweet potato slices released moisture, drain it off before seasoning. Sprinkle the spice mix over the slices while tossing gently.
 - Preheat your air fryer to 180°C (356°F). Arrange the seasoned sweet potato slices in a single layer in the air fryer basket.
 - Cook the sweet potato slices for 6-9 minutes, checking halfway for even cooking. Watch for a golden brown color.
 - Once golden brown, remove chips and transfer them to a cooling rack to enhance crispiness.
